These beautiful bouquets of asparagus will brighten up any buffet table! The Castello Danish Blue Cheese balances the sweet taste of asparagus with the bolder flavor of prosciutto in a twist on the usual salad.
2 bunchespencil thin asparagus spears, blanched
¼ cupCastello Danish Blue Cheese
2 cupsmache or salad greens
Olive oil, for drizzling
Working with one slice of prosciutto at a time, lay out the prosciutto and sprinkle with blue cheese. Place about 7 to 10 spears of asparagus on each slice of prosciutto. Beginning at one end, roll the prosciutto around the asparagus in a cone shape. Arrange on a platter with lightly dressed greens.
