The ubiquitous national cocktail of Brazil the Caipirinha, made with Cachaça – a distilled spirit from sugar cane juice – can be found under the umbrellas along Ipanema beach, in Forró clubs and dance bars, restaurants and at home. Fresh and heady, it is at its best sipped in the shade as the hot summer sun slips below the horizon.
1. Press the limes against the cutting board and roll to release the juices. Cut limes in half and then each half into thirds or quarters so you have 6 to 8 pieces.
2. Put the sections and 2 teaspoons of sugar into each rocks or Old Fashioned glass and muddle together for 15 to 20 seconds. Fill glass with ice and add 2 ½ ounces of cachaça.
3. Place shaker over rocks glass, shake hard for a half minute or so and return to rocks glass.
4. Garnish with a fresh slice of lime if desired.
