The Negroni, along with Prosecco and the Aperol Cocktail (Aperol and white wine), is a perennial favorite along the bar at Sant’ Ambroeus and thousands of other pasticcerie and enoteche (pastry shops and wine shops) in Milano at cocktail hour. These colorful drinks are usually accompanied by salatini, small plates that arrive with the cocktails and include an assortment of miniature puff pastries studded with parmegiano for salame, crostini, or other salty tidbits. 1. Fill a cocktail shaker with ice. Add gin, Campari, and sweet vermouth and stir.
2. Prepare rocks glasses with ice and thick-cut orange slice. If the orange is very large, halve the slice.
3. Strain drink into glasses and top with club soda.
Tip: Prefer vodka to gin? Substitute and make a Negroski!
