1. Sift flour into a bowl, make a well in center and break in the egg. Beat together with a wooden spoon, adding the milk a little at a time until you have a smooth batter. Allow to stand while making the filling.
2. In a bowl, combine all the filling ingredients and mix well. If batter is too thick, add in a little water to thin down.
3. Heat oil or butter in a small pan and cook pancakes in the normal way. Serve filled with the cheese mixture and sprinkled with icing sugar or drizzled with maple syrup.
