Sliced radish tea sandwiches are actually a classic recipe. The House of Castello®, however, likes to buck tradition and make the sandwich spread with Blue cheese for a spicy flavor to balance the bite of the radish.
1. Thinly slice the radish and transfer them to cold water. Set aside.
2. Blend the butter and Blue cheese until smooth, set aside.
3. Press out bread rounds with the cutter. Spread them with butter-cheese mixture. Layer with sliced radishes. Cover with a clean damp kitchen towel until ready to serve.
