An elegant – and positively delicious – appetizer for your next dinner party! Serve with the Blue cheese dip, and sprinkle with sea salt.
1. In a small bowl, mix sour cream, mayonnaise, green onions, parsley, and Blue cheese. Cover and chill until serving.
2. Preheat oven to 400ºF. Cut potatoes in half, lengthwise. Cut each half into 4-6 spears. Brush potatoes with olive oil and roast in oven until edges begin to brown, about 8 minutes. Turn over potatoes and cook for another 8-10 minutes. Remove and sprinkle smoked paprika on each spear.
3. Serve warm with Blue cheese dip.
